My name is Carolina Velasco. I am currently a Dietetic Intern from Keiser University and I am completing the community rotation with Fit with Jen. I graduated from Florida International University (FIU) with a Bachelor of Science in Dietetics and Nutrition in 2014. The reason for me going towards the Nutrition and Dietetics field, is being able to help people with chronic diseases and teach them on how to manage a healthier lifestyle. Being myself diagnosed with hypothyroidism and Ulcerative Colitis over 8 years ago, I certainly believe that with proper nutrition, chronic diseases are treatable and/or future conditions are preventable. It’s fascinating learning about the science behind on how food works and nourishes the body.
In Fall 2015, I started working as a Nutrition Wellness Coordinator for Miami-Dade Public Schools—Head Start and Early Head Start Program, working alongside a Registered Dietitian. In this position, I have obtained the necessary skills essential to provide nutrition services to children from a vulnerable population. This job has provided the opportunity to showcase my ability to work independently and within a group. Then, I decided to pursue a Master of Science in Dietetics and Nutrition from Florida International University (FIU) and graduating in 2019. I am excited to put in practice the knowledge learned, in helping clients and the community achieve their objectives.
